Creamy Chicken, Kale & Red Onion

Ingredients

1 whole egg room temperature
1 whole onion, red halved and sliced thick
1 tablespoon oil, evoo
1 tablespoon fat, any
16 ounce chicken, thigh boneless, skinless
12-16 ounce kale stems removed, cut into bite size pieces
salt & pepper to taste
Béchamel
3 clove garlic or to taste
1 tablespoon ghee or butter
5.4 ounce coconut cream or heavy cream
12 teaspoon spice, pepper, white

last time I made it I did 2 eggs... used a funnel to drip the cream into the blender on low. I baked the garlic with the chicken and roasted the onions on a cookie sheet underneath. All worked out well except the onions I had in for 25 mins.. should have maybe been 15-20.
