White Bean, Sausage and Sage Soup

I thought I’d try to find a way to make “White Beans” start with an “s” so that I could have a nicely alliterated recipe title. I couldn’t come up with anything (suggestions??)

Even if I can’t get the title to sing the way I want it to, this soup sure did. This was a big hit, not only at the dinner table but also with my wallet at the grocery store. The only thing I had to buy was some sausages. Read those sausage labels very carefully. And if it doesn’t specifically say “gluten-free” don’t buy it! I’ve been tricked by those sausages more than once. I always read ingredients, but gluten isn’t always disclosed in the ingredients. The only way to be really sure is to look for a specific label that says “gluten-free”

The Bean, ironically, does not prefer food with beans in it. He’s gotten much better at tolerating them over the years (he no longer throws himself on the floor wailing in anguish), but in order to keep the peace at dinner I do try to serve the beans with something he prefers. Sausage is definitely on that list. So he was very happy to eat his serving and even asked for seconds. I believe he also requested the soup on our weekly “refrigerator cleanout” night. Go figure.

I also love any recipe that allows me to pile everything into the crockpot and then forget about it for the rest of the day.

We served this up with zucchini fritters. You could also use cornbread, muffins, or even serve it over a baked potato.

I also wanted to point out that we’re adding some new categories to make the posts more searchable. Someday I’ll get around to going back through the archives and recategorizing all the old posts, but for now I’ll just be noting whether new recipes are Top 8 Allergen-Free (this means no gluten, dairy, soy, eggs, peanuts, other tree nuts, shellfish, other fish), Dairy Free, or Gluten Free. Not all the recipes I post will be Top 8 Free, so I hope this will make it easier to find the recipes that suit your diet. It will also allow me to categorize recipes I post on other days (like for our new Autumn Cookbook Tour! Check back on Wednesday!) that might slip under your allergen-free radar.

White Bean, Sausage and Sage Soup

Ingredients

  • 1 pound dried white beans soaked overnight
  • 2 cups chopped fresh tomatoes or 14 oz crushed tomatoes
  • 2 cloves garlic minced
  • 14 cup fresh sage chopped
  • 1 pound italian sausages sliced
  • 1 tbs salt
  • 2 tbs oil
  • 8 cups water

Method

Drain the beans. Place everything in a slow cooker and stir. Cover and cook on low for 7-9 hours.
