Build Your Own Parfait Bar + Homemade Granola Recipe

When hosting or preparing a meal for a group of people, it’s so nice to have a versatile meal that each person can cater to their own preferences and needs. We love having big meals with friends and family, and it’s good to have an arsenal of ideas up your sleeve. Taco bar, baked potato bar, and salad bar are just a few of our favorites. However, I didn’t have too many options for a build your own breakfast.

My crew does love having parfaits for breakfast, so we decided to try out a parfait breakfast bar with homemade granola! It came out delicious and was truly so simple. Make a batch of granola, grab your favorite yogurt, and lay out all of the fruity and crunchy toppings. Your crew will be sure to love it too!

This healthy granola is simple to make and packed with protein and fiber. Made with oats, almonds, pecans, sunflower seeds, pumpkin seeds, and cranberries, it is both delicious and good for you! It is sweetened and seasoned with only olive oil, maple syrup, and a touch of vanilla, cinnamon, and salt. Oats are naturally gluten free, but be sure to check the packaging to confirm if needed.

Before beginning, prep the almonds and pecans by roughly chopping. Then, in a large bowl, combine all of the dry ingredients – oats, almonds, pecans, sunflower seeds, pumpkin seeds, cranberries, cinnamon and salt.

In a large liquid measuring cup, measure out the olive oil, maple syrup, and vanilla and stir together. Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.

Evenly press the granola into a baking pan and bake for 25-30 minutes at 325 degrees. To help the granola set in clumps, let it cool completely before stirring.

To set up your breakfast bar, set out a bowl of yogurt, fresh granola, and all of your favorite toppings. Fruit is a great option – strawberries, blueberries, grapes, kiwi, peaches, bananas, raspberries, pomegranate. Some other ideas include honey, maple syrup, chocolate chips, chia seeds, and nuts.

Another perk of this meal is that you can easily scale it for either a big or small crowd. For a bigger group, simply grab an extra container of yogurt from the store and a few extra fruits. To make it even more fun (and easier on you!), have your guests help out by bringing a few parfait toppings of their own.

Ingredients

  • 3 cups old fashioned rolled oats
  • 1 cup almonds chopped
  • 12 cup pecans chopped
  • 23 cup dried cranberries (or raisins)
  • 12 cup sunflower seeds
  • 12 cup pumpkin seeds
  • 34 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 12 cup maple syrup
  • 12 cup olive oil

Directions

  1. In a large bowl, stir together all dry ingredients
  2. In a large measuring cup, combine the vanilla, maple syrup, and olive oil
  3. Pour wet ingredients over dry ingredients and stir until everything is evenly coated
  4. Pour the granola into a large baking pan and press down firmly and evenly
  5. Bake at 325 degrees for 25-30 minutes; rotate the pan halfway through baking
  6. Let the granola cool completely before disturbing; this helps the granola set and form clumps
  7. Enjoy!
