Breakfast Cookies

I really do let the kids eat these for breakfast.  Or any time they want, for that matter! The recipe is simple.  You just mix everything together, scoop and bake.  My son loves helping.  They also freeze really well, so I scoop a bunch and set them close together on a cookie sheet, freeze them, then dump into a bag and bake a few at a time.  I actually do this with almost all my cookies.  I love being able to whip up a tray of cookies at a moment’s notice (or when craving strikes!)   Sam likes to get them out and set them on a cookie sheet himself.  He’s very grown up 🙂

Plan To Eat

Soaking your seeds isn’t totally necessary, but it makes them healthier, and easier for little teeth to chomp.  You can also swap out most of the ingredients for similar items in your cupboards: different dried fruits, rolled grains, sweeteners, milk, jam, etc.  Experiment and see what you come up with!  And if it’s yummy, share it here; I’ll want to try it 🙂
