Sausage, Potato, and Cabbage Tray Bake

I love one pot meals for their ease, simplicity, and (cough) low number of dishes. But sometimes I think we all need a bit of a change up in the texture department. You can only eat a bowl of soft for so many nights in a row.

So when I read about the “tray bake” concept in a Jamie Oliver book years ago I was sold. It’s a one-pan meal, but it’s usually got more interesting textures and flavors going on than the usual pot o’ something.

The concept is simple, really. You just combine a protein, a veg, and a starch all into one tray (or 9×13″ baking pan) and cook it up. This version contains potatoes, cabbage, and sausage; but the sky is the limit. Served alongside my favorite sauerkraut or a quick salad and you’ve got yourself a meal.

And you get to trade that spoon in for an actual fork!

Sausage, Potato, and Cabbage Tray Bake

Serves:

Ingredients

  • 4 medium-large potatoes cut into 1/2" chunks
  • 12 large head of green cabbage cored and cut into 1/2" slices
  • 13 cup cooking fat (olive or coconut oil, melted lard or tallow)
  • 4 smoked, pre-cooked sausages
  • salt and pepper to taste
  • seasoning salt optional

Directions

  1. Preheat oven to 425 degree. Drizzle half of cooking fat over a large baking sheet. Spread potatoes around baking sheet and then cabbage slices. Sprinkle salt and pepper over all. Place in oven for 30 minutes or until potatoes are nearly tender. If using uncooked sausage par-boil them for 15 minutes during this time.
  2. Remove tray from oven and place sausages on top. Bake an additional 10-15 minutes, or until sausages are hot and potatoes are cooked-through.
  3. Divide sausages, cabbage, and potatoes amongst four plates and sprinkle cabbage and potatoes with seasoning salt if desired.
