20-Minute Pumpkin Chili from Thriving Home is our recipe of the day and the 23rd recipe that we have shared with your this month. This recipe is gluten-free, dairy-free, vegetarian, and made in just 20 minutes. Talk about a great meal for a busy weeknight! Adding pumpkin to soups and chilis has been a new thing for me this winter season, and I love how it adds a rich thickness. Hearty soups have definitely been a favorite around my house this year!
I served this meal with a green side salad (Which, I have learned from this challenge I do frequently!) and topped the soup with slices of avocado!
