Meatballs and Pasta, Tossed Salad with French Dressing

Here are the recipes we cooked tonight for our Jamie’s Food Revolution Cook-along.

I have never made meatballs before. It was mostly successful, the kids ate it up.  The only part I didn’t like for a weeknight meal is the amount of prep time. Making the meatballs took a while and then cooking them all took a while.  All told, it was probably at least an hour of hands on time.  I think next time I will make the meatballs ahead of time.  I didn’t have any cream crackers so I used 2 slices of stale sour dough bread that I ran through the blender.  I really like tomato sauce with fresh basil, it is so much yummier than dried herbs!  It doesn’t make much sauce, so I might double that portion next time.

I really like Jamie Oliver’s ideas on salad.  He says to go buy a few different heads of lettuce and then pre-wash it all so it is ready to go when it is time, like a bagged salad but cheaper and fresher and customized to your preferences.  I put the washed salad in a big bowl lined with a towel rather than a drawer as I do not have the luxury of an extra drawer to devote just to lettuce.  A ziplock bag with a paper towel in it works too, for smaller amounts.

The Jam Jar French Dressing is yummy!  We love it.  It is so easy to make and store in a jam jar.  We are looking forward to trying the others!  I was very pleased with how easy and quick it was to put together a salad with homemade dressing that tasted so good.
