Frog Egg Pudding

I wrote an article for a local food magazine, Edible Wasatch, about summer popsicles. As it turns out, the Frog Egg Popsicle recipe makes a darn good Frog Egg Pudding too!It took a bit of fiddling to work out a recipe that looked like jiggly frog eggs, but tasted like a dessert.  I was inspired by those yummy kombucha drinks you can buy with floating, gelatinous chia seeds. This totally makes me want to throw a frog-themed birthday party. Anyone have any amphibian loving kids? My son totally got a kick out of this. The recipe is super simple:

Frog Egg Pudding

Course: Desserts

Serves:

Ingredients

  • 2 cups pear juice
  • 2 cups spinach
  • 3 Tbsp honey
  • 14 cup chia seeds

Directions

  1. In a blender, combine pear juice, spinach and honey.
  2. Stir in chia seeds.
