Simple Summer Salmon with three Scrumptous Sides

Our garden is bursting right now with goodness. It’s days like this that my February self longs for… yet even in the midst of this bounty – I sometimes get sick of the way I prepare beets, cucumbers, squash, kale, chard… etc. How to mix it up and do something different?

There’s nothing really too amazing about this meal – except that for me – it was just that… different. It began with a tired momma  scratching her head, but it ended with such a tasty combination that I thought I would share. Sometimes it’s great to get some fresh inspiration.

Grilled Salmon with Fennel Pesto

Course: Appetizers

Main Ingredient: Fish

Serves:

Ingredients

  • 12 oz. Fresh Salmon Fillets
  • fresh fennel tops Several handfuls of
  • 14 cup raw sunflower seeds
  • 12 lemon juice of
  • 12 fresh garlic clove
  • 1 TBL salt and pepper
  • Olive oil drizzled until creamy
  • 6 Pounds Russet Potatoes

Directions

  1. Add all items (except the salmon!) into a small blender/food processor and blend
  2. Just salt and pepper, a drizzle of olive oil and a squeeze of lemon – then onto the grill.

Beet & Cucumber Salad

This salad is extremely flexible in terms of the quantities and ratios. Combine the ingredients in the quantities that you prefer.

Serves:

Ingredients

  • Beets
  • Cucumber
  • Red onion
  • Olive Oil
  • Lemon Juice
  • 1 12 teaspoons Salt
  • Fresh Garlic
  • Honey
  • 6 Pounds Russet Potatoes
  • Chopped Onion

Directions

  1. Cooked the beets, then peel and cube
  2. Combine with sliced cucumbers and sliced red onion
  3. Make a simple dressing using the olive oil, lemon juice, salt, fresh garlic, and honey

Asian Kale & Carrot Slaw

This salad is extremely flexible in terms of the quantities and ratios. Combine the ingredients in the quantities that you prefer.

Serves:

Ingredients

  • Raw Lacinato kale sliced very fine
  • Shredded Carrots
  • Green onions – sliced
  • Toasted sesame seeds
  • Olive oil
  • Lemon juice
  • Fresh chopped ginger
  • Fresh Garlic
  • Honey
  • Sow-sodium soy sauce a splash of
  • 4 russet potatoes

Directions

  1. Combine the kale, carrots, onions, and sesame seeds to taste
  2. Make a simple dressing of olive oil, lemon juice, fresh chopped ginger & garlic, honey & a splash of soy sauce

Steamed Lemon Rice

So easy. You’ll only need the recipe the first time, if that.

Serves:

Ingredients

  • Cooked Rice
  • 1 Whole Lemon
  • Suteed Garlic to taste
  • 6 Pounds Russet Potatoes

Directions

  1. Squeeze the entire lemon into the rice before cooking the rice
  2. Cook the rice
  3. Add sautéed garlic
