One-Pot Paleo
Three of these incredible challenge recipes come from One Pot Paleo by Jenny Castaneda. This is one of those cookbooks that I’ve decided that everyone should own. I mean it! Each and every recipe in this cookbook is paleo friendly, made in one pot, and gluten free. (The trifecta, right?) You might be thinking “I’m not paleo or gluten free..,” but please don’t let that keep you from checking out this book. We’re not strictly paleo at my house, but Jenny has developed recipes for every palate and picky eater around. Listen to some of these titles: Filipino Chicken BBQ, Austrian Pancake Bites, Honey Dijon Salmon Steaks. Are you drooling yet?
This book is divided into several different sections: Sizzling Cast Iron, Comforting Casseroles, Scrumptious Stir-Fry, Bake, Broil or Grill, Warming Soups and Stews, Sensational Salads, and lastly The Basics. Each section uses a different method for cooking complete meals in one pot. We love how simple dinner can become when you’re only using one dish. This leaves us more time for family fun and less time with cleaning up.
One-Pot Paleo is summed up like this: “Healthy, hearty paleo meals, without the dishes, mess, or stress.” We love that! Here are the One-Pot Paleo recipes that you’ll find in our One Pot April Challenge:
Skirt Steak Fajitas

Truly amazing. You’ll know you’re in for a treat as soon as the beef hits the hot cast-iron pan because your entire house will smell so good. And it’s simple too. Mix a marinade and let the beef bathe in it for one hour, sear it for 5 minutes in a hot pan, sauté the vegetables, and serve.
Chicken Pesto Zucchini

We’re big fans of spiralized veggies. A lot of people think of them as mere substitutes for traditional noodles, but this dish is all about giving them their own deserved place at the table. The pesto and sun-dried tomatoes sends this dish over the top.
Japanese Hot Pot

This is a classic example of a meal in a bowl: noodles, beef, veggies, served in a sweet broth. It’s truly delicious and filling.
