Landing-Page-Header-ImageOnce again, our monthly challenge is winding down and we are in awe of how fast another month has flown by! We hope that the recipes from Instant Pot July have graced your meal planner and made planning for your family just a bit easier.

I am new to cooking with an Instant Pot, but one of the great things I’ve found with it are the endless amount of resources. Simple Google or Pinterest searches result in millions of results for recipes, tips, reviews, and recommendations. Check out the Resources section at the bottom of this post for more.

It’s not to late to join us! Though the final giveaway will happen on August 1, the recipes will remain and you can join Instant Pot July at any time.

This week…

…we are sharing three more amazing recipes from our challenge sponsor Red and Honey.

Amazing Irish Beef Stew

Instant Pot Mild Chicken Curry with Coconut Milk

Instant Pot Shredded BBQ Chicken

Each one of these recipes is unique and spiced up my meal plan. My family loved each one!

The BBQ chicken was a recipe that was easily made into several other meals this week (and next!) including: BBQ tacos with slaw, BBQ chicken salad, sandwiches, even stew. I love that the Instant Pot makes meals easy and batch cooking saves so much time for busy families. If I want to create large batches of food to add to my Plan to Eat Freezer or eat for multiple meals in one week, I scale the serving size for the recipes I’ve added to my Planner. This feature is a lifesaver and comes in handy for large batches or cooking for groups!

These recipes are great when you have a busy schedule because they are ideal for cooking early in the week and reheating later on. They worked wonderfully for us and reheating them didn’t sacrifice flavor — in fact, I think that they tasted even better because the flavors had time to meld together really well. Prepping these recipes early in the week was helpful and saved us so much time!

If you’re curious how I add these meals to my planner, since I am not cooking them the day we eat them, here’s how: I start by planning the recipe on the date that I intend to cook it. From there, I add Notes to my planner to signify when I plan to eat the leftovers. It works really well for us and allows my family to know’s what’s for dinner and made for a smooth week!

Our Facebook Group is a great place to get tips like this to make meal planning easier…
