Chorizo Sweet Potato Skillet is another one pot meal that we’ve re-introduced for this challenge. Originally in our One Pot October Challenge, we decided there are a few recipes we want to make sure you don’t miss out on! This is one of those recipes.
This meal comes from Budget Bytes, and again, you know that it is not only scrumptious, but low cost, and filling! This meal blends together flavorful chorizo, black beans, rice, and salsa for a meal that is incredibly big on flavor and low on your budget.
As usual with one pot meals, I didn’t add any sides when I first served this to my crew. (I hate dishes, so one pot meals are amazing to help minimize post-dinner clean-up!) This meal could easily be served with chips and salsa or you could even repurpose leftovers by serving them over chips as nachos.
