Slow Cooker Coconut Curry Lentils from Budget Bytes is recipe #22 in our Easy Meals for the New Year Challenge! You probably know this already, but we’re huge fans of Budget Bytes recipes, and we love knowing that they’re all budget friendly and use many ingredients most of us have on hand!
This vegan recipe is made in the slow cooker and combines veggies, curry, coconut milk, lentils, and spices to create a rich and filling entree that is perfect for brisk winter days. I have been using lentils more and more often in my cooking. High in fiber and protein, these legumes create such a nice heartiness to soups and stews!
I served this recipe, per Budget Bytes instructions, with basmati rice and topped it with cilantro and green onions.
