Easy Meals for the New Year — Slow Cooker Mexican Stuffed Peppers

We’re 10 days into this challenge and only just getting started, but I feel as though we’ve already shared SO many recipes with you. Any favorites yet?

Today’s recipe might just fall into the “favorites” category for you. Slow Cooker Mexican Stuffed Peppers from The Slow Cooking Housewife requires minimal prep — just mixing together a few items and 5-6 hours of hands-off time in the slow cooker. Have we mentioned how much we love one pot style meals?

This recipe is filling, but very light and healthy. I didn’t pair this meal with any sides as it is a great stand-alone main dish. If you wanted to add a side, a bowl of mixed fruit or a green salad would be the perfect addition. You could even throw in some chips and guacamole if you’re feeding a crowd!
