Summer Recipe Roundup from the PTE Team

Summer is almost here and we’re excited about our gardens growing, munching on seasonal produce, and hosting backyard cookouts. And because of the change of seasons and new produce available, we’ve started to rotate new recipes into our meal plans. Out with the soups and stews and in with fresh, crisp greens and bright, summery flavors. 

Our team put together a bunch of fun, summer recipes to share with you to help inspire your upcoming summer meals. We hope you enjoy! 

Jess – Front-End Software Engineer 

Nashville Hot Chicken (Air Fryer) – I like to add just a dash of cayenne for mild, or half the cayenne for hot (and it is really hot)! Serve with my favorite fry sauce and spicy pickles with coleslaw on burger buns.

Copycat Cafe Rio Sweet Pork – I will often make this with chicken thighs instead of pork because I have better luck with “shredability” after cooking. As an added oomph, after shredding the meat stick it under the broiler, in the air fryer, or on a hot iron skillet in batches to get crispy edges on the meat. Serve inside a soft taco shell with pineapple salsa and cilantro lime rice. Definitely don’t skip the tomatillo ranch dressing!

Who doesn’t want lemonade from scratch? I love love love this classic recipe or this is my other go-to: Brazilian Lemonade

I made this garlic butter chicken with lemon asparagus recipe for the fam recently and it was a huge hit! The lemon asparagus adds a light and zesty freshness to the rich chicken bites. It’s a super easy one-pan meal that I now have on repeat.

I love a good pasta salad. They always feel nostalgic to me and will forever remind me of Summer, cookouts, camping, and more. I love this easy pesto pasta salad because it’s only 4 ingredients and is SO easy to throw together when you’re in a pinch.

One of my favorite high-protein workout smoothies is this raspberry coconut smoothie.
The lemony taste of this chicken sausage & spinach ravioli screams summer to me. I approve of anything with feta in it, like this yogurt-marinated chicken shawarma.

One of our favorite recipe books for Mexican food is The Ultimate Low-Fat Mexican Cookbook, printed in 1995 by a chef named Anne Lindsay Greer. Of course, in 1995 the low-fat craze was in full swing. The reason I love the recipes in this book is not for their low-fat adaptations, but because the flavor has to come from other places when the fat is removed. As the subtitle, All the Flavor Without All the Guilt, suggests, the recipes pop with flavor whether you follow the low-fat suggestions or not. (We don’t)

During the summer when peppers, onions, tomatoes, and corn are in their full glory, we love to make fajitas with corn salsa! It is one of the highlights of late summer. If you can find a copy of this book, I highly recommend it!

I found this recipe for Chicken Burgers with Avocado Corn Salsa last summer and it’s still a favorite at our house!  This Big Mac in a Bowl Salad really tastes like a Big Mac…but a much healthier version. 🙂 And it packs up well for a cold lunch the next day too. 

A weeknight favorite is this Cold Thai Noodle Salad. I love the crunch of fresh cucumbers and the peanut dressing!

It wouldn’t be summer without a fresh rhubarb and strawberry dessert! I’ve been making this Rhubarb Crisp on repeat.
