Homemade Pizookie (Copycat Recipe)

Have you ever gone to a restaurant and come home wondering if you could recreate your meal or dessert at home? Sometimes it’s a fun challenge and even inspiring to see what other people are cooking. To make it a tad easier on you, we thought it would be fun to go ahead and figure out this restaurant copycat recipe for you. So, if you are in need of a fun dessert for your next dinner, here you go!

Pizookie. If you aren’t already familiar with it yet, BJ’s restaurant made the pizookie famous. The name pizookie is a mash up between pizza and cookie… it’s basically a warm, gooey pizza-sized cookie topped with piles of ice cream. Sounds pretty great, right? Well it definitely is! And it’s so easy to replicate at home. We’ve got the recipe covered, you grab a few friends and try it out!

To begin, preheat the oven to 350 degrees and get out your cast iron skillet. If you don’t have a cast iron skillet, don’t worry. A round cake pan will work just as well. Grease the skillet well to make sure the cookie doesn’t stick and then set it to the side. In a small bowl, whisk together the flour, baking soda, and salt. We’ll come back to this in just a moment.

In a large mixing bowl, beat the softened butter with a mixer until smooth, and then add in the granulated sugar, brown sugar, and vanilla. Cream the mixture together and stop to scrape down the sides of the bowl as needed. Add in the eggs one at at time, mixing well after each addition. Eggs can be difficult to incorporate into a batter, so adding them one at a time and beating well allows them to fully emulsify. Gradually add in the flour mixture we prepared earlier and mix until combined. Finally, stir in the chocolate chips.

Once the cookie dough is ready, add it to the prepared skillet and spread evenly with a rubber spatula. Each skillet may be slightly different, but the important thing to pay attention to is how deep you fill it. The cookie dough will rise while baking, so only fill the pan to about half of the depth. If you have leftover dough, you can freeze it for later or bake it as individual cookies. I had just enough dough to make one large pizookie in a 9” skillet and one small pizookie in a little 5” cast iron skillet.

Bake at 350 degrees for 27-30 minutes or until golden brown on top. My small 5” skillet took slightly less time to bake at 22 minutes. Based on how gooey you want your pizookie though, take it out of the oven at your preference. Once out of the oven, let cool for a few minutes before digging in. It will be hot! When ready, add several heaping scoops of your vanilla ice cream and dig in!

If you want to mix up the flavors a bit, try switching out the mix-ins for the cookie dough. Instead of semi-sweet chocolate chips, you can try out dark chocolate, white chocolate, butterscotch, toffee, m&ms, the list goes on. If you want to branch out from the classic vanilla ice cream, substitute your favorite flavor ice cream or drizzle on some chocolate or caramel sauce. I think you get the idea. 😉

  • 1 cup unsalted butter softened
  • 34 cup granulated sugar
  • 34 cup brown sugar
  • 1 teaspoon vanilla
  • 2 eggs room temperature
  • 2 14 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • Ice cream for topping

Directions

  1. Preheat the oven to 350 degrees and grease cast-iron skillet well to prevent sticking.
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set to the side.
  3. In a large mixing bowl, beat the butter for about 30 seconds or until soft. Add in the granulated sugar, brown sugar, and vanilla and cream together.
  4. Add in the eggs one at a time and mix well after each addition. Scrape down the sides of the bowl as needed.
  5. Gradually mix in the flour mixture until well combined.
  6. Stir in the chocolate chips.
  7. Add the cookie dough to your cast iron skillet and spread evenly. Make sure to only fill to about half of the depth of the skillet to allow room for the cookie to rise.
  8. Bake at 350 degrees for 27-30 minutes or until lightly golden on top. [If you prefer a gooey center, take out a few minutes early!]
  9. Let cool slightly and then top with ice cream and enjoy!
