It’s time to move away from the hearty soups and stews we love in the winter and welcome recipes full of new flavors and fresh produce

Shawarma Stuffed Pitas – I made this recipe for the first time recently and it made it to our regular household rotation. It was surprisingly easy to make and the perfect combo of refreshing and comforting all at once. The dill tzatziki is so good, I could eat in on everything!

Authentic Spanish Vegetable Paella – My husband and I spent a month in Spain recently and wanted to try and make our own Paella. This was the perfect starter recipe for us to learn how. We were patting ourselves on the back with how good it turned out for our first shot at Paella! Will definitely be keeping this one in the mix this spring and summer with a rotation of fresh veggies from the garden.

Homemade Sourdough Cinnamon Toast Crunch Cereal – I’ve been making a ton of homemade sourdough lately and sometimes finding discard recipes is a little tough, as they can sometimes be complicated and time-consuming. I wasn’t sure about this one but I was pleasantly surprised how easy it was and how delicious it turned out. I felt like a kid again eating a bowl of cereal for breakfast, and having it homemade was a whole new level of fun!

Beans on toast is a popular breakfast in the UK, but I love it for any meal on a cloudy spring day! This recipe comes together quickly and is a big hit in my house.  

If you like ricotta cheese and have never tried swapping it for your red sauce on pizza, this is your sign to try it! My husband and I love ricotta and we’ve found it to be a great addition to a springy-themed pizza pie
