We love having people in our home and sharing meals together. There is just something special about time spent around the table that helps a deep relationship form. It’s even easier to commit to doing that if you know everyone is helping contribute to the meal. So, here is an easy and delicious dessert option for you to bring the next time you go share a meal with your people!
This is a classic vanilla cupcake recipe that you are sure to love. It is so simple to make and has a very easy clean up, which I really appreciate about a recipe.
You will need to set out your eggs, vanilla, sour cream, and milk in advance so that they can fully come to room temperature. This will help the mixture be cohesive when it comes time to mix everything together. I’m also sharing my favorite recipe for creamy chocolate buttercream that pairs perfectly with these cupcakes. Mmm, it is so good.
Before mixing up the batter, line the pan with cupcake liners and preheat the oven to 350 degrees. Then, in a large bowl, whisk together all of the dry ingredients – flour, sugar, baking soda, baking powder, and salt. Form a well in the center and set the bowl to the side for a moment.
In a separate bowl, combine the melted butter, room-temperature eggs, sour cream, milk, and vanilla. Whisk together the liquid ingredients until well combined. Now, pour the wet ingredients into the dry ingredients and stir for several minutes or until the batter is smooth and cohesive.
Add the batter to the cupcake pan, filling each cupcake about 2/3 full. This should be just shy of 1/4 cup of batter for each cupcake. Bake at 350 degrees for 18 minutes or until a toothpick inserted into the center comes out with a few dry crumbs.
If there is still wet batter, they need to bake a few more minutes. Once finished baking, transfer the cupcakes to a cooling rack. Make sure they cool completely before frosting or you will end up with quite the mess.
For the icing, I like the classic pairing of chocolate + vanilla. But these are your cupcakes! Feel free to mix it up and pair the cupcakes with your favorite flavor icing! To make the chocolate buttercream, first cream the softened butter until smooth. [What is softened butter? Let the butter sit on the counter for approximately 30 minutes. You know it’s ready to use when you can make a small imprint with your thumb when pressing gently on the stick of butter.]
Next, gradually mix in about half of the powdered sugar, scraping down the sides of the bowl as needed. Mix in the vanilla and cocoa powder. Lastly, alternate mixing in the water and remaining powdered sugar until everything is combined. Go ahead and taste a bit…
