1 Tbsp. olive oil
1 lb. ground turkey or chicken (you can also use beef or go vegan-beans only by using lentils instead of meat)
4 cups chicken or vegetable stock
1 small white onion diced
1 (14.5 oz) can diced tomatoes
1 (14.5 oz) can crushed tomatoes
1 (14.5 oz) can Great Northern beans rinsed and drained
1 (14.5 oz) can red kidney beans rinsed and drained
1 (11 oz) can whole kernel corn
1 (4 oz) can diced green chiles
1 (2.25 oz) can sliced black olives drained (optional)
2 Tbsp. taco seasoning or make your own
*-1 Tbsp. chili powder
1 tsp. garlic powder
1 tsp. black pepper
1 tsp. cumin
1 tsp. salt
12 tsp. paprika
14 tsp. onion powder
toppings: tortilla chips (strips or crushed) diced avocado, light sour cream or greek yogurt, fresh cilantro, lime wedges
