1-2 lbs chicken thighs or breasts, (1-2 lbs.)
6-8 cups chicken broth
2 cups carrots chopped
1 cup onion chopped
1 cup celery chopped
fresh garlic or garlic powder
rice noodles
salt
1 14oz can coconut milk
3 TB green thai curry paste
peanuts/cashews or peanut butter
green onion chopped
basil leaves or cilantro
